Roasted potatoes recipe

Potato dish containing roasted potatoes, garlic, and fresh herbs.

  • 2 pounds of baby potatoes
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of red pepper flakes
  • Salt and pepper, to taste
  • 1/4 cup of minced fresh parsley
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the potatoes on a baking sheet and drizzle with the olive oil.
  3. Sprinkle with the garlic, oregano, red pepper flakes, salt, and pepper.
  4. Toss the potatoes until well coated.
  5. Bake for approximately 30 minutes, stirring once halfway through, until the potatoes are golden brown and tender.
  6. Remove from the oven and stir in the minced parsley.
  7. Serve hot and enjoy!
