Tofu Scramble Breakfast Tacos


  • 1 tablespoon water
  • 1/2 small onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 cup diced tomato
  • 1/2 cup diced firm tofu
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 small tortillas
  • Chopped fresh cilantro, for garnish


  1. Heat a large pan over medium heat. Add the water and all of the vegetables to the pan and sauté until they are tender, about 5 minutes.
  2. Add the tofu, turmeric, cumin, paprika, garlic powder, salt, and pepper to the pan. Sauté the mixture until the tofu is heated through, about 3-5 minutes.
  3. Warm the tortillas in a separate pan over medium heat, or in the microwave wrapped in damp paper towels.
  4. Assemble the tacos by spooning the tofu scramble mixture into the center of each tortilla. Garnish with fresh cilantro and serve immediately.
