Tofu Scramble Breakfast Tacos
Ingredients:
- 1 tablespoon water
- 1/2 small onion, diced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 cup diced tomato
- 1/2 cup diced firm tofu
- 1/4 teaspoon turmeric
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 4 small tortillas
- Chopped fresh cilantro, for garnish
Instructions:
- Heat a large pan over medium heat. Add the water and all of the vegetables to the pan and sauté until they are tender, about 5 minutes.
- Add the tofu, turmeric, cumin, paprika, garlic powder, salt, and pepper to the pan. Sauté the mixture until the tofu is heated through, about 3-5 minutes.
- Warm the tortillas in a separate pan over medium heat, or in the microwave wrapped in damp paper towels.
- Assemble the tacos by spooning the tofu scramble mixture into the center of each tortilla. Garnish with fresh cilantro and serve immediately.
